Turkey Apple Sausage
Breakfast for dinner, or "brinner" as we call it, happens at least once a week in our house. It's fun and easy and with these quick sausage patties, extremely satisfying. As an added bonus this recipe is Whole 30 complaint, gluten-free, and paleo so just about everyone can enjoy it!
Ingredients:
- 1 small yellow onion
- 1 apple
- 1 pound Foster Farms Organic Ground Turkey
- fresh sage
- salt
- pepper
- eggs
- greens
- oil or ghee
Directions:
- Grate onion and apple into a large bowl. Drain some of the liquid off before adding the other ingredients.
- Add turkey, a handful of chopped sage, and salt and pepper. Mix until well combined.
- Heat a non-stick or cast iron skillet over medium heat and add a thin layer of oil.
- With wet hands (the mixture is sticky) carefully shape small patties and add them to the pan.
- Cook for a few minute on each side until the outside is brown and they are cooked through.
- Serve with fried eggs and sautéed greens.
Mediterranean Turkey Meatballs
Ever since I discovered the wonders of za'atar spice blend I've been making this recipe regularly. It is so simple and yet the flavor is off the charts, in fact you might want to make a double batch because these little meatballs are addicting!
Ingredients
- 1 pound Foster Farms Ground Turkey
- 6 teaspoons za'atar
- salt
- olive oil
- tzatziki and/or hummus
- pita
- arugula
- tomatoes
Directions
- Combine turkey and za'atar in a large bowl, if your spice bland has little or no salt, add salt as well.
- Heat a non-stick or cast iron skillet over medium high heat and add a few glugs of oil.
- Shape the meat into small balls and fry until brown all over and cooked thorough.
- Serve with store-bought or homemade tzatziki, hummus, and pita.
- Serve arugula and tomatoes as extra toppings or toss them with a red wine vinaigrette as a simple side salad.
Turkey Three Bean Chili
Good crockpot recipes are a lifesaver on busy weeknights. I really like this chili recipe, especially when you add browned ground turkey. If you don't want to fuss with the crockpot and dried beans, you can sub for cans of beans (don't drain off all the liquid) and skip the addition of water, it comes together on the stove in less than an hour.
Simply brown your turkey, add the onions and peppers and cook until soft, add the other ingredients and simmer until fragrant and slightly thickened. Note, for serving little ones I use sweet bell peppers in this recipe and serve hot sauce on the side for the grown ups.
